Fresh Drumsticks are the long green seed pods of the moringa tree (Moringa oleifera), widely used in South Indian and Sri Lankan cooking. Cut them into finger-length pieces before cooking. Once cooked, the soft inner flesh and seeds are eaten, while the tough, fibrous outer skin is usually left aside.
How to use: Sambar, drumstick curry, kulambu, avial and dal.
Storage: Keep refrigerated and use within a few days.
Also known as: Tamil: murungakkai. Sinhala: murunga. Hindi: sahjan.
